General aim and research areas

The PhD course in Food Science is a three-year advanced training course aimed at students graduated in scientific and technological disciplines with the purpose of providing them with basic theoretical and practical knowledge, analytical and experimental methodologies, ability to solve problems and ability to communicate their results in specific branches of food science and technology. In particular, the doctorate in Food Science is characterized by multi-disciplinarity and inter-disciplinarity that allow doctoral students to gain experience in various fields of research, such as:

Food technology
Food microbiology
Food chemistry and biochemistry
Food preservation and safety
Sensory analysis and consumer science
Modeling, design and innovation
Nutrition and health
Microbiome studies
Bioactive compounds and functional foods
Genetics and genomics applied to food
Food supply chain management and food authenticity
Global markets and trades

The PhD program will have no limits on the type of food commodities and may include any type of food and beverage. Collaborations with industries and other research institutions will constitute the basis for a strong innovative level of the research activities and outcomes.

Carrier opportunities

The doctor in Food Science will be able to cover leading roles in research and technological development in public and private sectors (universities, research centers, public administrations), in companies of the food and nutraceutical sector and in non-profit organizations, including small-scale producers and industrial scale companies. They could work in the position of food processing engineering, food researcher, agro-processing engineer, food technologist and chemist and many more. The PhDs who have benefited from "Big data" management experience will also be able to be used as "data scientists" in various fields of research and development. Furthermore, the growth in Italy and Europe of the food and nutraceutical sector, together with the constant presence at European level of funding for research and innovation, will constitute a further push towards the sector's need for highly qualified professionals in research and in data management.

Training

The doctorate is a highly qualified course, made up partly of training activities and partly of research activities, for a total of 180 credits, corresponding to a maximum of 1500 hours of work per year. In this process, the doctoral student is entrusted by the Academic Board to a supervisor, who may possibly choose one or more co-supervisors, who will guide him in both phases of training and research.

The teaching activity will be strictly functional to the research activities envisaged in the PhD course with reference to both advanced research and advanced training activities, including seminars, as well as interdisciplinary, multidisciplinary and transdisciplinary training activities (linguistic and IT improvement; activities in the field of teaching, research management and knowledge of European and international research systems, exploitation and dissemination of results, intellectual property and open access to data and research products, fundamental principles of ethics).

Doctoral students must acquire 180 credits over the three-year period, broken down as follows: at least 42 credits of frontal training activities and 138 credits of experimentation and research activities. Overall, no more than 1500 hours per year.

The 42 credits of training activities will consist of:

at least 24 credits from classroom teaching, with courses offered by doctoral schools and offered by master's degree courses, in the disciplinary areas that contribute to the doctorate;

the remaining 18 credits can be acquired through theoretical-practical courses, summer schools, and seminars on topics of interest for research activities, defined in agreement with the supervisor. A maximum of 1 CFU will be awarded for each participation in national and international workshops and conferences on topics related to the research activity.

For training activities that are not defined by CFU, the equivalence of 6 hours = 1 CFU will be valid

PhD students can carry out tutoring, supplementary and assistance teaching activities in degree and master's degree courses, for a maximum of 40 hours for each academic year. This activity will be certified by the supervisor, and will form part of the final judgment expressed by the Board, but does not contribute to the acquisition of credits.

Course organization

During the 1st year of the doctorate, the student, together with the supervisor, decides the topic on which his/her activity will focus, bearing in mind that the supervisor is a guide and that the doctoral student himself is responsible for his own research activity. Together they will define an individual study plan. PhD students will be able to choose courses from those proposed by the doctoral program or offered by other institutions (Italian or foreign). The training offer (shown in the table below) includes courses for the acquisition of transversal skills (indicated in bold), which the PhD student is strongly invited to follow, and in-depth courses on specific topics of interest for carrying out the research activities. Verification of the coherence of the courses followed with the doctoral program and responsibility of the supervisor. Finally, the experiments will be planned and a time plan prepared. At the end of the first year, the PhD student will present the objectives and strategies of his research project to the Academic Board.

During the 2nd year, the PhD student will complete the training activity and carry out most of the research activities, possibly also spending a period abroad, or in a company, if foreseen by his/her training path. At the end of the second year, the PhD students present the work carried out according to the program defined in the first year to the Academic Board. The passage to the following year is established by the Collegio on the basis of the results achieved in the courses, the thesis project and its presentation.

During the 3rd year, the doctoral student will complete their research activities, perhaps continuing or starting the experience in a laboratory abroad during this year, they will process their data and dedicate themselves to writing their thesis and publishing one or more papers.

The start of the Applied Statistics Course for Scientific Research - AY 2022/2023 - held by Prof. Antonio Di Matteo, is set for Thursday 26 January 2023 in room L from 2:30 pm to 5:30 pm.

The Ph.D. in Sustainable Agricultural and Forestry Systems and Food Security (SAFS) is a three-year advanced training course for graduate students in science and technology disciplines that aims to provide students with basic theoretical and practical knowledge, analytical and experimental methodologies, ability to solve problems with scientific method, and to communicate their results within their specific field but also to a wider audience. The doctoral student, at the end of his/her training, must produce an original contribution within her/his specific field of research.

The SAFS doctoral program aims to define highly qualified professional profiles in primary productions and global sustainability (environmental, economic and social) of agricultural and forestry systems.

In particular, the SAFS doctoral program is characterized by multi-disciplinarity and interdisciplinarity, which allows doctoral students to gain experience in different fields of research, such as: Sustainable intensification of agricultural and forestry productions; Adaptation of agricultural and forestry systems to climate change and resource-limited environments; Breeding and genomics for sustainable production systems; Protection and conservation of agricultural and forestry environments; Soil-plant interaction processes and mechanisms; Industrial and non-food crops, including ornamental crops, for reclamation and other applications; Soil and water conservation management toward the Sustainable Development Goals; Wildlife and natural resource management; Valorisation of biomass and organic wastes for high-value bioenergy, molecules and by-products; Circular economy in agriculture and forestry; Economics, policies, market and marketing of agri-food and forestry supply chains.

Employment opportunities

The professional opportunities for Ph.D. students in Sustainable Agricultural and Forestry Systems and Food Security reflect the multi- and inter-disciplinary peculiarities of this program. The Ph.D. in SAFS will be able to hold leading roles in research, technology development and management in public bodies (universities, research centers, public administrations) and private companies in the agricultural and forestry sector.

- defines the criteria for admission to the doctoral course

- assigns a supervisor to each student

Activities of the three-year course

The doctorate is a highly qualified course, consisting partly of training activities and partly of research activities, for a total number of 180 ECTS, corresponding to a maximum of 1500 hours of commitment per year. During these years, the PhD student is driven from a supervisor chosen by the Teaching Board, who can possibly choose one or more co-supervisors, who will help him in both the training and research phases.

During the 2nd year, the PhD student will complete the training activity and carry out most of the research activities, possibly also spending a period abroad.

During the 3rd year, the PhD student will complete his research activities, perhaps continuing or starting in this year the experience in a laboratory abroad, he/she will process his/her own data and will devote himself/herself to the drafting of the thesis and the publication of one or more works.

Training activity

PhD students are required to undertake training for a total of 42 credits to be acquired in the first two years, through:

- courses offered by the doctoral school and by master's degree courses in the disciplinary areas that contribute to the doctorate, for a total of 24 ECTS, of which at least 18 ECTS during the first year; some of the courses offered by the School include also transdisciplinary courses, such as the language course, statistics courses, and presentation of results, writing projects, etc.

- theoretical-practical courses, summer schools, seminars, conferences, on topics of interest for the research activity, defined in agreement with the supervisor, for a total of 18 ECTS.

A maximum of 1 CFU will be awarded for each participation in national and international workshops and conferences on topics related to research activities.

For training activities that are not defined by CFU, the equivalent of 6 hours = 1 CFU will be valid

All training activities must be certified by those who organize them, or by the teachers of the courses followed.
